A refreshing rosé. Perfect in every way. Grown in sandy limestone soils, this 100% Cinsault rosé from the South of France is best enjoyed in its youth. “Vin Gris” is a way to describe wine that is made just like white wine - with one exception: extracting just a bit of color from the skins as it is pressed before fermenting. The French term literally means “grey wine”.
This light, refreshing wine pairs well with dishes that are fresh and crisp. Great as an aperitif enjoyed at sunset on the patio, or a picnic at the beach. Goat cheese pairs wonderfully with this style of rosé as well. Crisp green salads with herb-crusted grilled chicken would be great. Trying making a minted mango and tomato salad with prosciutto. Raw, smoked, or lightly grilled fish pair very well. Serve with a bowl of fresh strawberries and whipped cream for a beautiful, delicious, yet simple dessert.
